Kale and Coconuts Meal Delivery was founded by Elizabeth Lim, a local to Manhattan Beach, who is a holistic nutritionist and self-taught chef. Elizabeth first began cooking for clients privately in their homes, slowly transitioned into delivering meals to multiple clients out of her (very tiny) home kitchen, and eventually expanded to a commercial kitchen in Redondo Beach.
Elizabeth saw the great need for a healthful, inspired, and organic meal delivery service that offered fully prepared meals. She was also motivated by the lack of quality take-out food offered in the South Bay and was constantly encountering busy moms who desired healthy and tasty meals for their families.
Elizabeth creates a custom menu each week based on the season, food trends, and most importantly what is inspiring her at the moment. She is known in her kitchen as “the sauce lady” since so many of her delicious meals are often topped off with a sauce that pulls the meal together and gives it that extra special touch.
Aside from creating dishes, Elizabeth is also 100% committed to sourcing high quality ingredients that she can stand behind. She has very high standards for all of the products she uses personally in her own home and applies that philosophy to her meal delivery business as well. Elizabeth has developed a service focused on offering healthy, personally selected meals without compromising taste, quality, or nutrition.
